My take
So easy to make and such a hit with the family. I make it with buttered white rice and a veggie, for a healthy, fulfilling meal.
Ingredients
- 6 tablespoons dark brown sugar
- 1 tablespoon Dijon mustard
- 1 tablespoon fish sauce
- 1 tablespoon fresh lime juice
- 1 tablespoon neutral oil
- 4 (6-oz.) skin-on salmon fillets
- Kosher salt
Steps
- Place a rack in the upper third of the oven and heat the broiler to high. In a small bowl, combine the brown sugar, mustard, fish sauce, and lime juice until smooth. Reserve 2 tablespoons of glaze for serving.
- Drizzle the oil onto a foil-lined sheet tray, spreading it to the edges with a pastry brush or paper towels. Season the salmon on all sides with salt and arrange on the prepared tray, skin side down. Pour half of the remaining glaze over the salmon.
- Broil the salmon for 4 minutes. Remove the tray from the oven and pour the remaining glaze over. Continue to broil until the salmon is cooked through and the glaze is slightly sticky, 4 minutes more (8 minutes total).
- Transfer the salmon to a platter. Spoon the reserved 2 tablespoons of glaze over the top and serve.
Cook’s notes
- How we eat it: Buttered white rice and a simple veggie on the side. Fast, filling, and nobody asks what’s for dinner twice.
- Foil is your friend: Line the sheet tray so cleanup is basically nothing. A little glaze may darken on the foil under the broiler. That’s fine.
- Swap if needed: Lemon juice works in place of lime, and soy sauce can stand in for fish sauce.
