Ingredients
- 1 (15 oz) can whole kernel corn, drained
- 1 (14.75 oz) can creamed corn
- 1 (8.5 oz) package dry cornbread mix
- 1 cup sour cream
- 1/2 cup butter, melted
- 2 large eggs, beaten
Steps
- Preheat oven to 350°F. Lightly grease a 9×9-inch baking dish.
- In a medium bowl, stir together the whole kernel corn, creamed corn, cornbread mix, sour cream, melted butter, and eggs until well combined.
- Spoon the mixture into the prepared dish.
- Bake about 45 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
Cook’s notes
- Cornbread mix: The classic shortcut is an 8.5 oz box (like Jiffy). That’s what keeps this at Prep 1.
- Bigger crowd: Double it and use a 9×13 pan; bake time may run a little longer.
- Optional add-ins: A handful of shredded cheddar or diced jalapeño if you want to dress it up.
