Corn Casserole

My take

Ingredients

  • 1 (15 oz) can whole kernel corn, drained
  • 1 (14.75 oz) can creamed corn
  • 1 (8.5 oz) package dry cornbread mix
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 2 large eggs, beaten

Steps

  1. Preheat oven to 350°F. Lightly grease a 9×9-inch baking dish.
  2. In a medium bowl, stir together the whole kernel corn, creamed corn, cornbread mix, sour cream, melted butter, and eggs until well combined.
  3. Spoon the mixture into the prepared dish.
  4. Bake about 45 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.

Cook’s notes

  • Cornbread mix: The classic shortcut is an 8.5 oz box (like Jiffy). That’s what keeps this at Prep 1.
  • Bigger crowd: Double it and use a 9×13 pan; bake time may run a little longer.
  • Optional add-ins: A handful of shredded cheddar or diced jalapeño if you want to dress it up.
