Green Bean Casserole

Ingredients

  • 1 tablespoon olive oil or butter
  • 1/2 yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 (10.5-oz) cans cream of mushroom soup
  • 1/4 cup milk
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper
  • 4 (14.5-oz) cans cut green beans, drained
  • 1 1/2 cups French fried onions

Steps

  1. Preheat oven to 350°F. Lightly spray a 9×13-inch baking dish with nonstick spray.
  2. In a large skillet over medium heat, warm the olive oil or butter. Add the onions and cook about 5 minutes, stirring occasionally, until translucent. Add the garlic and cook about 1 minute, just until fragrant.
  3. Stir in the undiluted cream of mushroom soup. Add the milk and cheese; stir until the cheese melts. Season with salt and pepper. Fold in the green beans.
  4. Pour into the prepared dish. Top with fried onions. Bake uncovered about 30 minutes, until hot and bubbly.

Cook’s notes

  • Make ahead: Assemble the night before without the fried onions (they get soggy). Cover airtight and refrigerate. Add onions just before baking, and give a cold casserole a few extra minutes in the oven.
  • Fresh beans: About 2 pounds, blanched first if you want them softer. Canned keeps this at Prep 1 on purpose.
  • Cheese swaps: Monterey Jack is mild and melts well; mozzarella or gouda also work.
